Sweet Roasted Pumpkin Seeds

Preheat oven to 350 degrees

* Mix together in a bowl 2 tablespoons butter, 1 teaspoon cinnamon, 1/2 teaspoon of allspice, 1/2 teaspoon nutmeg, and 1/4 teaspoon light brown sugar.

*Melt mixture in the microwave for 15 seconds.

*Pour butter mixture over 2 cups of pumpkin seeds in a bowl and stir together.

*Spread the pumpkin seeds on a cookie sheet and place in a 350ºF preheated oven for 20 minutes.

*Remove, let cool, and serve

Gourmet Spicy Pumpkin Seeds Recipe

Preheat oven to 300 degrees

Ingredients:

1 1/2 cups pumpkin seeds
2 teaspoons melted butter or oil (olive oil is what I prefer)
salt to taste (we like lots of salt)

For the fun, optional part: (pick one or a few of the below variations that would go well together)

garlic powder or garlic salt
seasoned salt
black pepper (cracked is best)
salt free seasoning blend, such as Mrs. Dash brand
cayenne pepper
Cajun seasoning
chili powder
Italian seasoning combo
grated fresh Parmesan

Instructions:

Clean off any major chunks of pumpkin off seeds. Its not necessary to get them perfect.

In a bowl with the melted butter or oil and seasonings of your choice, toss the seeds. Spread seeds in a single layer on an oiled baking sheet. (or spray with cooking spray is what I prefer).

Bake for about 30 minutes, stirring occasionally, until golden brown. Let cool

Simple Roasted Pumkin Seeds

Preheat oven to 400 degrees

Toasted Pumpkin Seeds

Ingredients:

One medium sized pumpkin
Salt
Olive oil

Method

* Cut open the pumpkin and use a strong metal spoon to scoop out the insides. Clean and rinse the seeds.

* In a small saucepan, add the seeds to water, aproximately 2 cups of water to every half cup of seeds. Add a Tablespoon of salt for every cup of water. Bring to a boil. Let simmer for 10 minutes.

*Remove from heat and drain.

* Spread about a tablespoon of olive oil over the bottom of a roasting pan. Spread the seeds out over the roasting pan, all in one layer. Bake on the top rack until the seeds begin to brown, 10-20 minutes. When browned to your satisfaction, remove from the oven and let the pan cool on a rack.

*Cool seeds all the way down before eating. Either crack to remove the inner seed or just eat as is.
